Christmas is about family, so it’s a nice time to do something special on the smoker or the grill. Standing rib roasts, racks of lamb and other fancy cuts are popular, but my family enjoys steer butt (and laughing at me when I say “butt”).
A good butcher can do the trimming for you, if you like. After that, all it needs is a good rub and some smoke to enhance that beef flavor. Here is how I smoke a steer butt. You can stop snickering now.
